Louianna Organic Balsamic Vinegar is from the Modena region in Italy. The balsamic vinegar is the result of the slow acidification of cooked grape must and wine vinegar alongside a four year maturation process in oak wooden casks. Aged balsamic vinegar is thicker, sweeter and more aromatic due to a longer reducing and ageing period. It is left to season in the antique oak casks where it embodies its unique fragrances and flavours.

Louianna's Organic Balsamic Vinegar has been awarded two reputable certifications. 

 

It is USDA Organic, the U.S. Department of Agriculture has put in place a set of national standards that labeled "organic" must meet, whether it is grown in the United States or imported from other countries. Organic food is produced without using most conventional pesticides; fertilizers made with synthetic ingredients or sewage sludge; bioengineering; or ionizing radiation.

Certified PDO by the European Union awarded this balsamic the prestigious Protected Geographical Indication (PGI) label to Balsamic Vinegar of Modena. This award recognizes the importance of a product that holds the reputation of the products made in Modena Italy.

PGI is a quality certification awarded to food and agriculture products whose quality reputation and other particular characteristics depend on their geographical origin. PGI - certifies producers must observe stringent rules in the making of their products, and respect for these rules is enforced by the specially-appointed supervisory body.
